Fazenda UM was founded in 2009 on an abandoned farm in southern Minas Gerais, driven by the vision of Stefano Um, with the goal of redefining Brazilian specialty coffee through quality, traceability, and innovation at origin.
The farm is part of Um Coffee Co, a project focused on elevating Brazilian coffee through experimentation, precise processing, and participation in international competitions. In 2023, the UM family made history when Boram Um became Brazil’s first World Barista Champion, using a coffee produced on the family farm. On the same day, Garam Um achieved third place at the World Brewers Cup.
With 300 hectares, Fazenda UM blends the clean, sweet characteristics of Brazilian naturals with carefully controlled experimental processes. This Pink Bourbon Natural Dark Room is a clear expression of that philosophy: dried in temperature- and humidity-controlled chambers, allowing for precise fermentation and exceptional aromatic clarity.
