Café la Tribu is a network of cooperatives working in coordination with a common goal: "to make coffee cultivation a dignified form of progress and development for the families who depend on this crop in the Sierra Madre of Chiapas." Within this network, the founding coffee cooperatives are Fundadores, Reserva 1920, and Cafés Especiales SPR. Together, they represent 539 farming families with a production capacity of approximately 23,240 quintals over 1,907 hectares. They work their crops in harmony with Mother Nature, using organic production methods with coffee plantations managed under diversified shade systems. These farms are located at altitudes of 1,500 to 1,800 metres above sea level, within the buffer zone of the El Triunfo Biosphere Reserve, a Natural Protected Area (NPA). Amidst mountains covered by fog-shrouded forests, the sound of the quetzal, a bird sacred to the Aztecs and Mayans, can be heard. This corner of the southeast of the country is one of the few places where this bird, which inspired the myth of the feathered serpent, can be seen flying—an important figure in the country’s culture. The quetzal (along with the jaguar, ocelot, tapir, and thousands of species that depend on these ecosystems) played a key role in the area’s designation as a Biosphere Reserve in 1990. Much of the region’s natural wealth is attributed to the abundance of water circulating through it. The mountains, filled with trees, act as a sponge that absorbs moisture from the Pacific Ocean, resulting in abundant mist and rain. These geographical conditions favour the production of high-quality coffee, with better yields and improved cup characteristics: acidity, aroma, and body.
