👨🌾 About the Coffee producer:
For three generations, the Rodríguez family has cared for the land at Finca El Azafrán, passing down both their love for coffee and their respect for the traditions that have shaped it.
Under the leadership of his father, Luis Hernán Rodríguez Zapata, the family combines modern techniques with enduring values, applying excellence in the good agricultural practices learned from him at every stage of production. Located on the slopes of the Peñas Blancas mountain range in southern Huila, the farm is surrounded by fertile clay and sandy soils, abundant native wildlife, and the imposing Andean oak (Quercus humboldtii).
In recent years, the family has renewed its coffee plantations with varieties resistant to diseases and adapted to cooler climates, encouraging a slow maturation of the cherries.
and an exceptional development of flavor. Their commitment to learning led them to study coffee fermentation in order to understand the crucial role of microbiology in the process. Today, with well-defined protocols and precise fermentations, El Azafrán consistently produces high-quality coffees with distinctive cup profiles.
