San José Ixtepec is an ejido located at an altitude of 1,600 metres above sea level, with a temperate humid climate, ideal conditions for growing high-quality coffee. Currently, San José Ixtepec is facing a severe labour shortage as the younger generations are emigrating to the United States, abandoning the coffee farms and putting the continuity of this noble activity at risk. Neri Ortiz, from a coffee-growing family, is a small-scale producer and roaster of specialty coffees, passionate about natural processes. He collaborates and works closely with the small coffee farmers in the area, providing advice on the technical aspects of their crops. During the harvest, he buys the best selected cherries, and then, alongside his family, carefully and meticulously processes them on his small plot. To achieve this exceptional Natural, he allowed the cherries to ferment anaerobically in sealed bags for 3 days in a cool, low-temperature environment. After that, he let the cherries ferment for 2 more days in water, performing flotation to separate defective beans before drying the cherries in the sun on beds until they reach the desired moisture content, regularly turning them to ensure even drying. With this project, Neri Ortiz aims to positively influence the solution to this adverse situation in the community by training producers in sustainable farming techniques to produce high-quality coffee, thus generating competitive jobs and rooting the farmers within the community.
